Ingredients
3 bananas (yields about 1 ½ cups mashed)
⅓ cup pure maple syrup
1 tsp alcohol-free vanilla extract or ½ tsp pure vanilla powder
½ cup unsweetened almond or coconut milk
2 cups gluten-free oat flour
½ cup millet flour
1 tsp aluminum-free baking powder
¼ tsp baking soda
1 cup fresh or thawed frozen mixed berries, such as blackberries, raspberries, wild blueberries, and chopped strawberries
Directions
Preheat the oven to 350°F/180°C.
Line a 9-×-5-inch loaf pan with parchment paper.
Place the bananas in a bowl and mash with a fork or potato masher. Add the maple syrup, vanilla, and almond or coconut milk. Mix well.
Combine the gluten-free oat flour, millet flour, baking powder, and baking soda in a second bowl. Whisk until lump-free. Add the wet ingredients and gently fold until you get a smooth combined batter.
Add the berries and stir very gently, just enough to incorporate them.
Pour the batter into the loaf pan and bake for 50 to 60 minutes until a toothpick inserted in the centre comes out clean. Remove from the oven and cool completely before slicing
