Fluffy, naturally sweetened, and studded with wild blueberries — these Honey Marshmallows are made the old-fashioned way with real honey and grass-fed gelatin, no refined sugar or corn syrup in sight.


Wild Blueberry Honey Marshmallows

Ingredients

  • 1 Cup Local Honey
  • ¼ Cup Filtered Water
  • 3 Tbsp Grass-Fed Gelatin
  • ½ Tsp Vanilla Extract
  • Pinch of Celtic Sea Salt
  • ½ Cup Wild Blueberries (Thawed from Frozen)

    Directions

    01.

    In a large mixing bowl or the bowl of a stand mixer, combine the water and gelatin. Stir to combine and let sit for 5–10 minutes to bloom.

    In a medium saucepan, combine the honey, water, and a pinch of Celtic sea salt.

    03.

    Cook over medium-high heat until the mixture reaches 115°C or starts to gently bubble.

    04.

    With the mixer on low speed, slowly pour the hot honey syrup into the bloomed gelatin.

    05.

    Gradually increase the speed to high and continue beating for 10–15 minutes, until thick, fluffy, and tripled in volume.

    06.

    Add the vanilla extract and beat until incorporated.

    07.

    Line a square baking pan. Pour the marshmallow mixture into the prepared pan, spreading it out evenly.

    08.

    Evenly sprinkle the wild blueberries over the top of the marshmallow mixture, gently pressing them in.

    09.

    Place the marshmallows in the fridge for at least an hour to set. Enjoy!
