Ingredients

1 cup local honey

¼ cup filtered water

3 tablespoons grass-fed gelatin

1/2 teaspoon vanilla extract

Pinch of Celtic sea salt

1/2 cup wild blueberries (Thawed from frozen)
Directions
In a large mixing bowl or the bowl of a stand mixer, combine ¼ cup water and 3 tablespoons gelatin. Stir to combine and let sit for 5-10 minutes to bloom.
In a medium saucepan, combine 1 cup honey, ¼ cup water, and a pinch of Celtic sea salt.
Cook over medium-high heat until the mixture reaches 115degrees celsius or starts to gently bubble.
With the mixer on low speed, slowly pour the hot honey syrup into the bloomed gelatin. Gradually increase the speed to high and continue beating for 10-15 minutes, until thick, fluffy, and tripled in volume.
Add 1/2 teaspoon vanilla extract and beat until incorporated.
Line a square baking pan.
Pour the marshmallow mixture into the prepared pan, spreading it out evenly.
Evenly sprinkle 1/2 cup wild blueberries over the top of the marshmallow mixture, gently pressing them in.
Place the marshmallows in the fridge for at least an hour to set.
