Ingredients

3 large eggs

½ cup milk

½ cup flour (can do ½ almond flour + ½ tapioca for a GF version with great lift)

1 tbsp maple syrup

1 tsp vanilla

Pinch sea salt

2 tbsp butter or ghee (in the pan)

1 cup frozen wild blueberries
Directions
Preheat properly (the secret to the puff)
Heat oven to 220°C. Place a cast-iron pan inside
Blend the batter. Add eggs, milk, flour, maple, vanilla & salt. Blend 15–20 sec until smooth and slightly frothy.
Pour & swirl. Remove hot pan from oven. Add your butter, then pour in wild blueberries. Pour the batter on top. Don’t mix just leave and whack straight in the oven.
Bake for 16–19 minutes until puffed, golden, and crisp on edges.
